Preparation
1) Wash and cut all vegetables and onions very finely
2) Wash and cut mushrooms inti four pieces
3) Cut chicken into thin and long strips 2cm
4) Cut garlic cloves finely
5) Cut sausages into thin and round pieces
6) Cut spring onions finely
7) Cut chillis very finely
8) Beat the eggs in a bowl
Cooking Process
1) In a very deep chinese wok take some oil and fry chicken for 5 minutes and transfer into a big plate
2) Fry sausages in the same wok adding oil if required for 3 minutes and transfer into the same plate
3) Fry prawns for 4 minutes and transfer into the same plate
4) Heat the remaining oil in the wok and add garlic and fry for 1 minute
5) Add onions and chillis and fry for 2 minutes
6) Add vegetable and mushrooms and fry for 3-4 minutes adding little soya sauce and salt
7) Add fried chicken , mushrooms and prawns and mix well and fry for another 2 minutes
8) Add Beaten egg and fry for 2 minutes
9) Now add rice and fry for 7-8 minutes mixing continously
10) Add 2 TBSP Tomato sauce, 1 TBSP light Soya Sauce and remaining dark soyasauce and salt to taste fry for another 5-6 minutes
11) Garnish with spring onions
12) Serve piping hot
