• Baby Aubergines - 300g Onions - 2 Cherry tomatoes - 6 Green chillies - 2 Dry Desiccated Coconut - 2 tbsp Coriander seeds - 2tbsp Poppy seeds - 1tbsp Ginger/Garlic paste - 1tbsp Garam Masala - 1/2tbsp Oil - 3 tbsp Chilli powder - 1tbsp Turmeric - 1/4tbsp Coriander Leaves - A bunch Salt

Preparation

1) Wash and make two cuts cross wise as shown and place them in a bowl with cold water adding 1/4tbsp salt

2) Chope Onions, tomatoes, green chillies and coriander leaves finely

3) Grind dry coconut, coriander seeds and poppy seeds into a fine paste adding little bit of water

Cooking Process

1) Heat oil in a shallow bottomed pan, add onions and green chillies fry for 3-4 minutes

2) Now add cut Aubergines with enough salt, cover the pan simmer for 5-8 minutes turning carefully

3) Then add chilli powder, turmeric, ginger/Garlic paste and coconut paste and cook in very low heat for about 10 minutes adding little water and chopped tomatoes  turning very gently

4) Finally sprinkle Garam masala and chopped coriander and cook for 5 minutes

5) Serve with plain rice, tastes heavenly
